- Mandoline Blade — for cucumber
- Grater — for garlic, ginger
Ingredients
- 2 mini cucumbers
- 2 garlic cloves, grated
- 1 tsp fresh ginger, grated
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp chilli crip
- 1 tsp sesame oil
- 1 tsp sesame seeds
Method
- Shave the cucumbers thin on the mandoline blade, salt them well, and leave to drain for 10 minutes. Pat dry.
- Grate the garlic and ginger into a bowl, then whisk in the vinegar, soy sauce, chilli crisp, and sesame oil.
- Toss the cucumber through until every slice is coated.
- Scatter with sesame seeds and eat cold.
