Winter Veggie Soup
A warming bowl that’s budget-friendly and perfect for meal prep.
Ingredients
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- Italian herbs, salt, pepper
Instructions
- Chop all veggies with the Fullstar Chopper.
- Sauté onion, carrot, and celery in a pot until softened.
- Add zucchini, tomatoes, broth, and herbs.
- Simmer for 20–25 minutes. Season to taste.
