Grating the apples instead of slicing them is what makes these bars set soft and jammy all the way to the edge.

- Grater — for apples, lemon zest
Ingredients
- 4 apples
- 1 lemon
- 1 1/2 cups oats
- 1 cup flour
- 3/4 cup brown sugar
- ½ cup butter, melted
- 1 tsp cinnamon
- Pinch salt
Method
- Peel the apples, then grate them coarsely and squeeze out the excess juice.
- Grate the lemon zest over the apples and stir through the cinnamon.
- Rub the oats, flour, sugar, butter and salt together into a loose crumble.
- Press two thirds of it firmly into a lined tray to make the base.
- Spread the grated apple over the top, then scatter the remaining crumble.
- Bake at 350°F for 35–40 minutes until golden, and cool fully before cutting.
