5-Minute Veggie Fried Rice

Busy weeknight? No problem. This fried rice comes together in minutes, packed with veggies, and saves you tons of prep time thanks to the Fullstar Chopper.

Ingredients

  • 2 cups cooked rice (day-old is best)
  • 1 cup carrots, diced
  • 1 cup bell peppers, diced
  • ½ cup onion, diced
  • 2 eggs, lightly beaten
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Optional: chopped scallions & sesame seeds

Instructions

  1. Dice carrots, peppers, and onion using the Fullstar Chopper.
  2. Heat olive oil in a skillet. Add veggies and cook for 3 minutes.
  3. Push veggies to the side, scramble eggs in the same pan.
  4. Stir in rice, soy sauce, and sesame oil.
  5. Garnish with scallions and sesame seeds.
