Ingredients
- 2 cups cooked rice (day-old is best)
- 1 cup carrots, diced
- 1 cup bell peppers, diced
- ½ cup onion, diced
- 2 eggs, lightly beaten
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- Optional: chopped scallions & sesame seeds
Instructions
- Dice carrots, peppers, and onion using the Fullstar Chopper.
- Heat olive oil in a skillet. Add veggies and cook for 3 minutes.
- Push veggies to the side, scramble eggs in the same pan.
- Stir in rice, soy sauce, and sesame oil.
- Garnish with scallions and sesame seeds.
